Ethiopian Cabbage, Pepper Ground Beef Indian Curry Fusion by Donna/Blue Thunder
Take half a purple or red or green cabbage
Slice thinly
Medium onion diced
2 large Bell Peppers diced and seeded without the tops
Or 6 mini poppin peppers with tops off and seeded thinkly sliced
Olive oil in pan
Garlic 1 to 2 pod pieces or 1 to 2 teaspoons garlic powder no salt
Sea salt a pinch to taste
Berbere powder 1 to 2 Tablespoons
Powdered Ginger 1 to 2 teaspoons
1 to 2 Tablespoons of apple cider vinegar
1 pound of ground meat
1 to 2 Tablespoons tomato paste or ¼ cup tomato sauce
¼ bone broth or chicken/beef broth
Put in frying pan the onions, spices and peppers and cabbage
And start cooking that down with ground meat breaking up in pieces
As it cooks with the cabbage, onions and peppers with spices
Then as the meat is browned; add the tomato paste or sauce and apple
Cider vinegar and salt and bone broth and simmer til all is broken
Down to very tender especially the cabbage and stir to avoid burning.
Once cooked; turn off heat and eat with injera bread or rice or mani or chapati.
