Filipino Chicken Adobo
Hello my Gluten-Free Lovers;
Let me warn you; I cook plenty for 30-40 people. You can do the math in reduction of the amount of the recipe I have given
Take tamari or soy sauce gluten free from Asian store is cheaper
Bay leaves whole
1/2 teaspoon whole Peppercorns
Onions chopped and diced
White or unfiltered apple cider vinegar
sea salt from Asian store is cheaper
1 large packet chicken drumsticks in other word 4 to 5 lbs chicken all together
1 large packet chicken thighs - remove skin
minced garlic teaspoons 6 to 8 (cloves)
In separate bowl to marinate the chicken that is washed and cleaned:
Take:
1/2 teaspoon peppercorns
minced garlic
1/2 to 3/4 cups soy sauce/tamari
1/2 to 3/4 vinegar
Marinate for at least 20 minutes mixing these thoroughly around the chicken/pork/beef
Take 6 cups jasmine rice
1 can coconut milk optional
1-2 Tablespoons coconut oil optional
Fill water level to first pointer fingers first line
Add Sea salt
Bring rise to med-high to boil til bubbly and then simmer 15 to 20 minutes til done. Add the bay leaves and cover.
Now drain the juices of the chicken pieces and take a frying pan ad
brown both sides fo the chicken and set aside. Then take a large
pot and put all chicken and juices and remainder of marination juices
in one pot and cook til chicken so tender 20 to 30 minutes medium heat
and set aside.
Enjoy with side salad or Szechuan cubed egg plant. That's another recipe. LOL.
