Gluten Free Banana French Toast


4 slices recipe

Take 3-4 eggs and beat (organic no steroids)

Take 1/4-1/2 cup almond or dairy free milk

Add vanilla extract

1/2 teaspoon of ground cinnamon

3-4 almost very ripe bananas

Blueberries or seasonal fruit

Faux sour cream or sour cream

Mash the bananas that are speckled brown spots out of the their skin. Add the eggs and if you like egg whites double the eggs. Add the vanilla extract and cinnamon spice and mix.

Bananas will be chunky and that's all good.

Now take the toasted, cooled spelt bread slice and soak in each side. Take coconut oil

1 Teaspoon in a fry pan and heat and melt oil. Then on medium heat put the slices

in one spaced out. Remaining batter? Well, just pour that on Baby. LOL.

Brown each side 4 to 5 minutes approximately and serve with faux

sour cream or sour cream and blue berries or any other seasonal fruit even bananas!
