Donna's Farm Fresh Parmesan Rosemary Oregano Chicken Dinner 5/23/2025

Donna’s Pan Fried Farm Chicken in Parmesan Rosemary with Pasta/Gnocchi
Chicken:
Take 4 thigh pieces bone in
3-4 Tablespoons
Olive oil to put in fry pan with lid - keep lid off for now
1 teaspoon sundried tomato diced
¼ Cup wine vinegar red or white or lemon juice if none
Fresh rosemary strands 3 to 4
Red onion small to medium diced
2 to 3 teaspoons minced garlic
¾ cup chicken broth
Optional 2 to 3 teaspoons Zhoug sauce or 2 teaspoon paprika powder
Dairy free ½ cup shredded parmesan cheese or 1 cup - hold set aside
Option instead of another cup of dairy free parmesan cheese - hold set aside
Shred some parmesan rosemary…if you can’t find the cheese
Just use any parmesan Italian shredded cup of cheese - hold set aside
¼ cup almond or dairy free milk
1 Tablespoon dried oregano
2 to 3 Tablespoons gluten free panko or gluten free flour
Pepper to taste and
Pinch of sea salt
Pasta:
Boil Gluten free cauliflower gnocchi (Trader Joe’s) or gluten free gnocchi or any pasta and cook as directed and run cold water and drain. Set aside.
Vegetables
Take fresh green beans washed and cut in inch size pieces and boil in salt water until tender then drain and put in a frying pan fry olive oil with garlic and sea salt and mushrooms to taste and til tender as the side.
Start with fry pan and add olive oil and onion with garlic, start to put in Zhoug sauce/paprika, sun dried tomatoes, salt and pepper, rosemary and oregano and then add the chicken and brown on each side and add the chicken broth and then add the almond milk and let it cook. Add more chicken broth or almond milk as needed. Check chicken after covering 15-20 minutes if you prick it then it has no blood then add the red/white wine vinegar (you can use lemon juice if none) cheeses and keep stirring thoroughly and let it melt and make a creamy slightly thickened consistency and allow the chicken to cook 10-15 minutes more and prick if no blood covered and simmered so it is bubbly and sauce is thickened slightly.
Plate the pasta on the plate and then add the chicken on the side and the sauce on the pasta/gnocchi. Serve with a side of greens like green beans cut inch size pieces in garlic and shiitake mushroom in olive oil after boiled and drain in salted water then add in olive oil in a separate fry pan and the veggies and garlic and pinch of sea salt.
