Fish Meal with Fonio (Gluten W. African Grain) & Sides
Hello Dear Ones;
Creating in the kitchen with the spice called "Berbare" from Ethiopia and the gluten free grain called 'fonio.' Fonio is very much a West African grain that is small and similar to couscous. You find this on Amazon or at International Farmers' Market, Middle Eastern or African stores.
Fonio Pilaf
2 cups vegetable broth unsalted
1 cup fonio
1 Tablespoon ground garlic
1 Tablespoon dried onion pieces
1 Tablespoon coriander ground or ground cumin
1 Tablespoon ground turmeric
1/4 Red ground chili
1/4 to 1/2 teaspoon sea salt
1/4 cup roasted peanuts or roasted nuts (I use almonds because of peanut allergy)
1 small can garbanzo beans or any kind of beans you like
Boil the vegetable broth and add sea salt in a medium pot and add fonio once boiled and the dry ingredients to medium flame on stove top. Cover the fonio
4 to 5 minutes. Roast the nuts in the mean time and set aside to cook 4 to 5 minutes and drain the beans and set aside. Then add the the beans and nuts and carefully mix folding over all sides of the fonio into itself in the pot. You are done.
Fish (I used filet cuts no skin for stews)
Sprinkle 1- 2 Tablespoons bbq or dry rub If salt in the rub do not add sea salt
1 Tablespoon ground garlic powder
Sprinkle sea salt if rub not salt to taste
Heat over 350 degrees Fahrenheit. When it reaches temperature add fish to cook for 15 minutes and remove.
Cucumber - Onion - Honey - Berbare Salad
Take 2 large peeled and sliced cucumbers or 4 to 6 small cukes (no peeling just wash)
Half medium onion diced (this helps with lung virus preventions)
1/2 teaspoon honey
Sprinkle pepper to taste
Sprinkle sea salt to taste
1 teaspoon Berbare spice powder
1 Tablespoon Olive Oil
1/2 small can of olives sliced & pitted
2 Tablespoons apple cider vinegar
Take all the cucumbers, onion, olives, spices and olive oil with apple cider vinegar or any vinegar and mix together and chill.
Serves 4 people.
